COLOMBIA
Colombia's diverse microclimates and high-altitude growing regions produce some of the world's most consistently excellent coffees. A benchmark for balanced, approachable specialty coffee.
This lot is a fresh arrival from smallholder famers growing Caturra, Colombia, and Castillo varieties in the Southern Huila region. Carefully crafted by local families, cherries are pulped and undergo 18–36 hours of controlled fermentation, traditional washing and 12–20 days of sun drying for a clean, balanced cup. The goal here is to enhance the natural characteristics of Huila's high-altitude coffee, highlighting their sweetness, complexity and cleanliness.
